“We eat linoleic acid that is concentrated in various oils, grains and packaged
foods, and then linoleic acid is converted within our bodies to arachidonic
acid—a precursor of prostaglandin E2 (PGE2), the primary eicosanoid

animal products, particularly in fatty meat, chicken skin and farm-raised fish
such as tilapia and catfish. Sooner or later, the outcome will be a chronic inflammatory disease,” he explains.
